The company’s head office is located in Sefro in the province of Macerata on an area of 30,000 square meters, of which 18,000 square meters are covered by fish tanks. Furthermore, the company, which currently has more than 100 employees, also has 17 additional plants in central and northern Italy. The first GLOBALG.A.P. certificate was awarded in December 2011, while today nine plants are GLOBALG.A.P. certified. From the self-produced GLOBALG.A.P. certified feed to the processing of the finished product, everything in this operation is provided in-house, thus ensuring total control of the production cycle. This is one of the group’s strengths, as constant checks during the trout’s breeding cycle can be ensured. At the beginning of the process, the embryonic eggs are placed in the incubators for about 20 days until they hatch. The fingerlings then undergo a period of passive swimming, until the full resorption of the embryo sac. This is followed by the progressive phase of transferring the fingerlings into tanks, which increase in size, according to the time after hatching (i.e. 10 days after hatching (0.3 g.), 30 days after hatching, and in the fourth month of life). A new selection is then carried out and once the fingerlings weigh roughly 55g they are transferred to another farm to complete the cycle. When the trout have reached the target weight, they are put into special tanks to avoid traumas before the slaughter which follows through a painless electric pulse. At the time of slaughter, the fish are normally about one and a half years old. The business has also achieved other forms of certification, including ISO 9001, IFS, ASC, and Naturland (at the Sefro and Rivodutri sites). Furthermore, the family business supports the Pappa Fish project in the Marche region to promote the consumption of fish by school-age children. [--]
